ROASTED HERB POTATOES (FAN SHAPED)

Ingredients
  1. Washed, Pontiac or Brushed (peeled) whole potatoes
  2. Olive Oil
  3. Fresh or Dried Herbs of your choice
  4. Salt
Instructions
  1. Finely chop the herbs or have the dried herbs ready.
  2. Slice each potato with slips carefully, making sure the knife does not got through all the way.
  3. Set them into a baking tray.
  4. Drizzle with olive oil
  5. Sprinkle with herbs and salt.
  6. Place into 200C oven and bake for 40 - 60 minutes (turning over half way).
Notes
  1. When cutting potatoes, slope knife at a 45 degree angle so the tip of the knife touches the cutting board without going through entire potato.
  2. Garlic can also be added and mixed into the olive oil before drizzling onto the potatoes.
