- 1 lemon
- 1 onion
- 1 tablespoon fresh herbs of your choice
- 3 garlic gloves – crushed
- 1 tablespoon mustard
- 2 tablespoons olive oil
- Whole chicken cut into pieces or any chicken pieces
- 1 large refrigerator grip freezer bag
- Salt and Pepper
Cut chicken in pieces or use chicken pieces (or fillets) and place them into a large refrigerator grip lock freezer bag.
Cut a lemon in half and freshly squeeze, put juice and also lemon halves into the bag.
Cut onion into quarters then eighths and finely chop herbs. Place these and all other ingredients: mustard, garlic, olive oil, salt and pepper into the bag.
Seal bag, squish and shake all ingredients together and leave to marinate in refrigerator for minimum of 2 hours or overnight.
Empty the bag straight into a baking dish and bake at 180C for 40 minutes to 1hr depending on your oven – serve with herb potatoes or baked vegetables or a salad.
