COFFEE BUTTER CAKE

Ingredients
- 150g butter
- 1 Cup brown sugar
- 2 eggs
- 2 Teaspoons instant coffee powder
- 2 Cups self~raising flour
- ½ Cup Milk
Coffee Butter Cream
- 100g butter
- ¾ Cup icing sugar
- 2 Tablespoons brown sugar
- 2 Teaspoons instant coffee powder
Instructions
- Pre heat oven to 180C
- In mixing bowl mix the butter and sugar until light and creamy.
- Add the eggs one at a time, beating thoroughly followed by the coffee powder and beat until combined.
- Next add the self-raising flour and milk; combine until mixture is almost smooth.
- Pour into prepared greased cake tin and bake for 35 minutes or if skewer comes out clean when inserted into center of cake.
- Leave cake in tin 10 minutes before turning onto wire rack to cool.
Coffee Butter Cream
- In a mixing bowl, beat the butter until light and creamy.
- Add the icing sugar, brown sugar and coffee powder; beat until is smooth and fluffy.
