  1. 125g Butter
  2. ¾ Cup caster sugar
  3. ¼ Cup icing sugar
  4. 1 Teaspoon vanilla essence
  5. ¼ Cup jam (any one of the following: Plum, Strawberry, Raspberry, Blueberry)
  6. 2 Eggs
  7. 1¼ Cups of self raising flour
  8. ½ Cup cocoa
  9. 1 Teaspoon bicab soda
  10. 1 Cup milk
  11. In a electric mixer (I have a Kenwood Chef), beat the butter, sugars and vanilla essence till fluffy. Add the eggs beating one at a time, then add the jam and  mix thoroughly ~ turn off the machine. Add the flour, cocoa and milk and mix till all combined. Pour into prepared cake tin and cook at 180C for 40 - 45 minutes.
Chocolate Icing
  1. 50g Butter
  2. 1 Cup Icing Sugar
  3. ½ Cup Cocoa
  4. 1 - 2 Tablespoons Milk
  5. Put all ingredients except the milk in a mixing bowl and mix till it resembles big chunks.
  6. Gradually add the milk while still mixing, turn mixer on high and beat until icing becomes a lighter brown and is fluffy.  You may need to add extra milk if too thick or if too thin more icing sugar.
