BEST EVER CHOCOLATE CAKE

Ingredients
- 125g Butter
- ¾ Cup caster sugar
- ¼ Cup icing sugar
- 1 Teaspoon vanilla essence
- ¼ Cup jam (any one of the following: Plum, Strawberry, Raspberry, Blueberry)
- 2 Eggs
- 1¼ Cups of self raising flour
- ½ Cup cocoa
- 1 Teaspoon bicab soda
- 1 Cup milk
- In a electric mixer (I have a Kenwood Chef), beat the butter, sugars and vanilla essence till fluffy. Add the eggs beating one at a time, then add the jam and mix thoroughly ~ turn off the machine. Add the flour, cocoa and milk and mix till all combined. Pour into prepared cake tin and cook at 180C for 40 - 45 minutes.
Chocolate Icing
- 50g Butter
- 1 Cup Icing Sugar
- ½ Cup Cocoa
- 1 - 2 Tablespoons Milk
- Put all ingredients except the milk in a mixing bowl and mix till it resembles big chunks.
- Gradually add the milk while still mixing, turn mixer on high and beat until icing becomes a lighter brown and is fluffy. You may need to add extra milk if too thick or if too thin more icing sugar.
