STAND UP POTATO BAKE

I rarely get to sit down and watch a cooking show or segment on television, however upon a recent visit to my mums, I saw this simple recipe on Better Homes and Gardens.  Of course No Excuses had to try it, but I changed and added more ingredients to the recipe.

Ingredients
  1. Peeled or washed potatoes ~ sliced thinly
  2. 25g melted butter
  3. ½ cup feta cheese
  4. ¼ cup parmesan cheese
  5. 2 - 4 tablespoons of fresh or dried parsley
  6. 2 - 4 tablespoons of fresh or dried rosemary
  7. 2 cloves of crushed garlic or 2 teaspoons of minced garlic
  8. 2 tablespoons of paprika
  9. salt and pepper to taste
  10. Thickened cream
Instructions
  1. Firstly have ready your baking dish, by rolling up a tea-towel and placing it underneath one end of the dish so it is on a slant.
  2. In a large mixing bowl place the sliced potatoes, cheese, herbs, spices, salt, pepper and garlic.
  3. Pour the melted butter over the top and using your hands mix everything thoroughly.
  4. Grab a handful of potatoes and place them ends up at the bottom end of the slope, keep adding the rest of the potatoes until all are wedged next to each other and standing upright.
  5. Pour a decent amount of thickened cream over the potatoes.
  6. Cover dish with aluminium foil or a lid and place in a 200C oven for about 40 minutes or until soft and a skewer goes easily through potatoes, remove cover and cook for another 10 - 20 minutes (depending on your oven) till top crisps and browns.
Notes
  1. One can also ad finely chopped onions, shallots, chives etc for extra flavour.
  2. ** This method of mixing the potato bake also works if you want to prepare it in the ordinary way, just mixed as above and lie flat, however drizzle cream throughout the layers.
