MINI PARTY PIZZA’S

These are very simply made, due to the fact that a Grade 1 class will be eating them for their end of year school party tomorrow.  Normally I would put gourmet ingredients on top eg. sundried-tomatoes, pesto sauce, olives, chives etc.



Ingredients:

BREAD MACHINE PIZZA DOUGH
Diced ham (or meats of your choice)
Tomato paste (or salsa)
Tasty cheese (sliced or grated)
Dried herbs (oregano)


Preparation is the key here, while the dough is in the machine, dice your meat/s, have the rolling pin ready, along with the tomato paste and other ingredients you are using.

Roll out the dough to the thickness of about 2 – 4cm.  Using a cookie cutter (mine is a Tupperware one), cut out as many circles as you can fit onto each rolled out sheet of dough.  Gather the off cuts, roll out again and continue using all the dough.  If you have a little dob left over, roll a ball in your hand and flatten into a pizza shape too.


Spray baking trays with Canola cooking oil and arrange the pizza’s  evenly. Next coat them with your tomato paste or salsa.

My salsa was also home-made and the left over sauce from my Quick & Easy Meatballs recipe (which I made last night), however, normally I would just open a tin of tomato paste.


Next step is to arrange your ingredients onto each pizza; I always start with the meat followed by everything else.


As for the cheese, a slice of tasty cheese works well (and it’s easy) on each pizza.  You may grate the cheese too if you wish.

Finally sprinkle with dried herbs (I used oregano).


Place in a 230C oven and bake for 15 – 20 minutes.
(Fresh dough or pastry should be cooked at a high temperature).

These can be made the day before and stored in fridge ready to bake when needed.
