MEAT MARINADES

Marinating can add extra flavour to a variety of meats so ideally it is best to marinate meat over night or during the day (for eight hours).  If you’re short of time, an hour will produce a good, but milder result.

To make up marinades, all you do is mix the ingredients thoroughly.  Always place meat in a glass or ceramic dish or if you have a Tupperware Season Serve marinating container, this works well or even a ziplock bag. See this recipe ~ MARINATED BAKED CHICKEN PIECES

  • Do NOT marinate in a metal containers since the acidic ingredients such as lemon juice or wine can react with the metal.
  • Turn meat occasionally so all sides are coated evenly with the marinade and always store covered in the refrigerator.
  • When barbecuing, always drain the meat and use the marinate as as the meat is cooking.
  • SWEET SUCCESS HINT – When using a marinade that contains honey or sugar, cook the meat at a lower heat than usual to stop the marinade from charring. Cooking times may need to be adjusted a little to allow for the temperature to reduce its heat.  Honey adds a lovely flavour to Asian style marinades too.

    SPICY VINDALOO PASTE

    For Beef or Lamb
    Ingredients for 4 steaks (servings)

    1 Teaspoon ground cardamom
    1 Teaspoon minced chilli
    1 Teaspoon ground cinnamon
    2 Teaspoons ground cumin
    2 Teaspoons turmeric
    2 Teaspoons hot mustard, smooth or whole grain
    ¼ Cup white vinegar

    MEDITERRANEAN MARINADE

    For Beef or Lamb
    Ingredients for 4 steaks (servings)

    3 Cloves of garlic, peeled
    ½ Cup tomato paste
    ½ Cup olive oil
    2 Teaspoons dried or fresh oregano
    ¼ Cup red wine

     

    HORSERADISH MARINADE

    For Beef
    Ingredients for 4 steaks (servings)

    1 Tablespoon canola oil
    1 Tablespoon horseradish cream 
    ½ Cup white wine
    2 Teaspoons fresh parsley or coriander ~ chopped
    2 Teaspoons wholegrain mustard

    HONEY MINT MARINADE

    For Beef, Lamb & Pork
    Ingredients for 4 steaks (servings)

    ½ Teaspoon sesame oil
    1 Tablespoon lemon juice
    ½-1 Teaspoon minced chilli
    1 Tablespoon fresh mint leaves ~ chopped
    2 Teaspoons honey

    ORANGE TERIYAKI MARINADE 

    For Beef
    Ingredients for 4 steaks (servings)

    Grated rind and juice of 1 orange
    ¼ Cup thick teriyaki baste or sauce
    2 Tablespoons soy sauce
    1 Tablespoon honey

    CHINESE MARINADE

    For Beef
    Ingredients for 4 steaks (servings)

    2 Tablespoons honey
    2 Tablespoons dry sherry
    2 Tablespoons soy sauce
    1 Teaspoons sesame oil
    1 Teaspoon Chinese five spice powder
    1 Teaspoon minced garlic or 1 clove crushed garlic
    1 Teaspoon minced ginger

    SPICY CITRUS MARINADE

    For Lamb
    Ingredients for 6-8 steaks (servings)

    350ml Grapefruit juice
    ⅔ Cup orange juice
    ⅔ Cup olive oil (add a few drops sesame oil, optional)
    2 Teaspoons crushed or minced garlic 
    2 Teaspoons hot paprika (or normal)
    2 Tablespoons brown sugar or honey
