EASY STRAWBERRY MUFFINS – GLUTEN FREE AND DAIRY FREE

Ingredients

  • 2 cups Gluten Free Self Raising Flour
  • 2 Tblsp GF Custard Powder
  • 1/4 cup Coconut Sugar
  • 1/2 cup fresh or frozen strawberries
  • 2 eggs
  • 3/4 cup milk
  • 3/4 cup rice bran or a cooking oil

Instructions

  1. Mix dry ingredients into a bowl. Add the wet ingredients and mix, followed by the strawberries – folding in gently. Put into greased muffin tray and bake for 15-20 minutes at 190C. (ready when skewer comes out clean).

Notes:

  1. Extra berries such as raspberries / blueberries or even chopped up apples can be added along with the strawberries for extra flavours. For protein muffins, add some vanilla protein powder.
