EASY STRAWBERRY MUFFINS – GLUTEN FREE AND DAIRY FREE

Ingredients
- 2 cups Gluten Free Self Raising Flour
- 2 Tblsp GF Custard Powder
- 1/4 cup Coconut Sugar
- 1/2 cup fresh or frozen strawberries
- 2 eggs
- 3/4 cup milk
- 3/4 cup rice bran or a cooking oil
Instructions
- Mix dry ingredients into a bowl. Add the wet ingredients and mix, followed by the strawberries – folding in gently. Put into greased muffin tray and bake for 15-20 minutes at 190C. (ready when skewer comes out clean).
Notes:
- Extra berries such as raspberries / blueberries or even chopped up apples can be added along with the strawberries for extra flavours. For protein muffins, add some vanilla protein powder.
