CAULIFLOWER SOUP
One of the 2 winning soups from the Soupalicious Challenge and Give Away!
- 1 Bunch / head of cauliflower
- 1 Tablespoon Massel Vegetable stock (chicken works well too)
- 1 Large or 2 small brown onions ~ finely chopped
- 3 Tablespoons of milk powder
- Salt and Pepper
Place the roughly chopped cauliflower and chopped onion into a heavy based saucepan.
Cover cauliflower with water and stir in stock and milk powder.
Bring to the boil and then simmer until the cauliflower is soft.
Blend until smooth.
Add salt and pepper to taste and stir.
Enjoy with some toasted buttered bread!

Curried Cauliflower Soup ~ before putting cauliflower into the pot; drizzle the bottom of the saucepan with some olive oil, and fry onions with 1 teaspoon of keens curry powder until translucent – then refer back to the recipe.
Thai Green Curry Cauliflower Soup ~ before putting cauliflower into the pot; drizzle the bottom of the saucepan with some olive oil, fry onions with 1 teaspoon of ALDI Thai Green Curry Paste and add 1/2 can of coconut milk.
