SMOKED SALMON, ASPARAGUS & BOK CHOY CREAMY PASTA

Ingredients
  1. 1 cup penne pasta - cooked
  2. 1 bunch of fresh asparagus ~ chopped into 2-3 centimetre pieces
  3. 1 bok choy - chopped
  4. 3-4 leaves of spiniach ~ chopped
  5. 1 cup of chives or shallots ~ chopped
  6. Olive oil
  7. 2 teaspoons minced or 2 gloves crushed garlic
  8. One small packet smoked salmon ~ chopped
  9. ¾ cup cream cheese, regular or light
  10. Salt and pepper
  11. Fresh dill to garnish
Instructions
  1. Add raw pasta to boiling water and cook.
  2. In deep frying pan, place the chopped bok choy, spinach, shallots/chives, garlic and asparagus. Drizzle a little olive oil and fry on low heat until spinach has wilted and asparagus soft. Turn pan to simmer setting, tossing regularly.
  3. Scoop out 1 cup of water from the pot of boiling pasta water, pour this into the frying pan and simmer pan (covered) for about 10 minutes.
  4. Add cream cheese to the water and greens and mix through.
  5. Drain the cooked pasta and pour this into the frying pan, add the salmon, salt and pepper to taste and toss till all ingredients are mixed thoroughly.
  6. Garnish with fresh dill.
