• Fish Fillets ~ ALDI Hoki Skin On (frozen and no bones)
  • Mushrooms
  • Parsley
  • Red Capsicum
  • Purple Onion
  • Aluminium Foil
  • Olive Oil
  • Balsamic Vinegar
  • Salt & Pepper

Chop Mushrooms, Onion, Capsicum & Parsley.

Place fish fillets onto sheets of foil and sprinkle chopped vegetables evenly onto the fish fillets.

Salt and Pepper the fish (I used rock salt and ground pepper).

Drizzle Olive Oil & Balsamic Vinegar on top.

Wrap fish in foil, making sure it has an air pocket at the top.

Cook in 200C oven for about 20 minutes (this could also be placed on the BBQ)

Ready when flesh is white and flakes.


Other Ingredient suggestions:

Shallots, leek, dried herbs, tomatoes (diced) and olive oil (no balsamic vinegar).
