GARLIC BOK CHOY, SPINACH OR SILVER BEET

 

Did you know that you don’t have to boil spinach in water to cook it.  I never do as I believe it looses its flavour and just tastes bland and turns out like mush.

Spinach and other varieties hold their own liquid which is released during the cooking process.

For this easy recipe all you need is your favourite spinach (or several varieties), 1 – 2 teaspoons of minced or 1-2 gloves of crushed garlic and Olive Oil.

         
 

If you are using silver-beet, just slice/chop it coarsely.  It doesn’t need to be small.  The stalks can also be used.

Place your spinach into a saucepan (just press it down if its too high in the pan), add the garlic and drizzle a little olive oil over the top ~ enough so it wont stick to bottom of pan.

On high heat, fry your spinach.  It will quickly shrink and produce its own liquid. Keep tossing and mixing till moist.

Turn down heat and simmer with lid on for about 5 minutes.  Turn off and leave lid on saucepan then before serving re-heat.

This is too easy and absolutely delicious.
