FRIED RICE ~ EASY WAY

I am one of those people that HATE leftovers sitting in the fridge and if I can create something new with them (not that leftovers happen often in a large family) and before they get eaten by someone else in the household, then it’s a bonus.  Here is a VERY easy fried rice recipe:

Ingredients (this is what I had in my fridge, but you can add anything else you like):

  • Cooked rice – 2 cups.  (Need an easy oven rice recipe ~ go here)
  • Vegetables; onion, mushrooms, celery, bok choy, capsicum etc ~ chopped
  • Olive oil
  • 2 eggs & milk (to make scrambled eggs)
  • Diced ham, bacon or chicken
  • Salt and pepper
  • Soy sauce
In a fry pan, add olive oil and cook all the vegetables till soft and transparent.  Add the ham, bacon or chicken and stir and cook.
 
Next add the cooked rice, followed by the scrambled eggs (I made mine in the microwave, 2 minutes and done)!
 
Drizzle a little soy sauce, stir and do the taste test.
