• 1 Small onion ~ chopped
  • 2 Tablespoons fresh parsley ~ chopped
  • 2 Tablespoons tomatoes ~ finely chopped
  • 1 Teaspoon minced garlic or one clove crushed
  • ½ Cup Cous Cous
  • ½ Cup water
  • Olive oil
  • Salt


In a small saucepan, fry on high heat the onion, parsley, tomato and garlic in a little olive oil.  Cook until the onion is transparent and the tomatoes create a orange sauce.  Add salt to taste.

Pour the water into the salsa, bring to boil then add the cous cous.


Turn off the head and place the lid on the pot for about 2 minutes.

Use a fork to stir.  

Serve with your favourite dish.
