EASY DOUBLE LAYERED CREAM & STRAWBERRY SPONGE CAKE

Cake Ingredients
  1. 1 cup self raising flour
  2. 1 tablespoon corn flour
  3. 5 eggs
  4. 1 teaspoon vanilla essence
  5. ¾ cup caster sugar
  6. 80g butter – melted
  7. 2 tablespoons plain or rice flour
Extra Ingredients
  1. 2 x 250g Strawberries punnet
  2. 2 x 600ml Thick Cream
Vanilla Custard Ingredients
  1. ¼ cup custard powder
  2. ¼ cup caster sugar
  3. 1½ cups milk
  4. 1 teaspoon vanilla essence
  5. ½ cup cream
Instructions
  1. Pre heat oven 180C.
  2. Line either two round spring form cake tins or one (you will need to cut your cake in half after it has cooled down though).
  3. In a mixing bowl, beat the eggs for 6 minutes or until thick and pale.
  4. Using metal spoon (or in a mixer), add the sugar beating constantly until disolved and mixture is pale and glossy. Next add the vanilla essence, flours and melted butter. Mix quickly and lightly.
  5. Spread mixture evening into your prepared cake tin/s.
  6. Bake for 40-50 mins (for one cake) or 20 mins (two spring form tins) until the sponge is lightly golden and shrinks from sides of the tin.
  7. Leave sponge in tin/s for about 10 mins before turning onto wire rack to cool.
Making the Custard
  1. Combine custard powder, sugar and milk in a saucepan. Stir continuously with a whisk over a medium heat until mixture boils and thickens. Stir in essence and ½ cup cream. Remove from heat and cool.
Assembling the cake
  1. Place one layer onto cake serving platter, pour over the custard and spread not quite to the edges.
  2. Slice enough strawberries to make a layer over the custard.
  3. Place top layer cake on top and ice entire cake with whipped cream.
  4. Place as many as desired strawberries in the centre, pipe cream around the edges and decorate with grated chocolate, buds or however you wish.
Notes
  1. For an extra kick and adults only, brush over both of the cake layers with ⅔ cup of Marsala then assemble cake as above.
